Bananas, they're my go-to fruit. I buy them and then I eat them, a simple enough arrangement. I have banana in my porridge, on toast and have been known to drizzle one or two in honey and blitz them in the microwave in the hope to satisfy a sweet tooth. The point? I like bananas. And yet, that doesn't stop a few sitting unwanted, browning in the fruit bowl. But that's where simple little recipes, like the one I'm about to share with you, come in handy.
Ingredients
- 2 ripe bananas in need of saving.
- 1 cup of oats
- 1/3 cup of chocolate chips
Method
1. Preheat oven to gas mark 3 or 170 degrees celsius and line a baking tray with baking paper.
2. Mash your bananas with a fork.
3. Add the oats and the chocolate chips to your mashed banana and mix until combined.
4. Using a tablespoon, scoop out the mixture onto your tray and flatten each cookie slightly with the back of the spoon. Note that these cookies will not rise or spread.
5. Pop the tray into the oven for 15 - 20 minutes, depending how chewy you like your cookies.
6. Once baked leave them to cool for 30 minutes.
7. Enjoy one or two cookies with one or two cups of tea.
